By popular demand, here is a detailed account of my food prep for my upcoming work week: I work 4 twelve hour midnight shifts a week, Monday through Thursday. I generally don’t eat ANYTHING at home on these days. So everything must get packed. Every Monday, I cook what I need for the week and pack up my four “lunches.” One goes in my lunch box, and the other three days each have their own cheap plastic shopping bag. Each morning when I get home from work, I transplant the contents of one said cheap plastic bag into my real lunch box. Then I go to sleep. No prep between shifts!
On my work days, I plan to eat every two hours. Most of my “meal” items are 100-150 calories. And I usually hit 900 calories and 80 grams of protein in a day, which is just right! Some days I don’t eat everything I bring. If my two hours pass and I’m not hungry yet, I wait until I am. So without further ado, here is my food prep tutorial:
First I get ALL my goods out. Time to get to work… First up, tzatziki and veggies. I’ll be posting my tzatziki recipe in the future! I measure out roughly 1 oz of cucumbers and 0.7 oz of carrots, throw them in a bag, and portion out the tzatziki in 2 oz disposable cups (available at the grocery store). I already had these pizzas made. Recipe to come in another week… Next up, all the makings for my mini caprese salads. Why not assemble them now? Well, because I don’t like soggy cheese and macerated tomatoes. Thursday’s salad would be looking kinda sorry by the time it made it there. So I put it together “to order” at work. Cut fresh (or buffalo) mozzarella into cubes. Or use the bite-sized pearls that come floating in water. Weigh 1.5 oz into each small container Flop ’em into your bags. And done! You’re good to go for another week. This week in particular, my daily stats for 7 mini meals are: 819 calories, 81 protein, 28 carbs and 44 fat. By the way I keep things like dressing/mayo cups in the main lunch box all week, starting with 4 servings in one cup and taking 1/4 of the contents each day.
