I’ve been on a gluten free diet for nearly four years. At the time, I thought it was the end of my life. No more Oreos? Twinkies? Bread that doesn’t taste like something you seal your driveway with?
(Please note that I’ve never said I was mature for an adult.)
A year or so ago, I discovered something called “Paleo.” It sounded interesting and it was naturally gluten free, so I started experimenting. Aside from the vegetables that I’m allergic to (cabbage, broccoli, spinach, cauliflower, and anything related to those), I can eat everything in the Paleo “diet” guidelines.
I’ve been playing around with it off and on since then. And the other day I thought, “OH! Why not try to pair this Paleo thing with my other love – the ?”
So this weekend, I decided to try doing it with breakfast. Everything you see in my little picture above is made from scratch (except the banana; I’m not that skilled in gardening).
So here’s what I did, I diced up some onions and green bell pepper and sliced two roma tomatoes into “rings.” I like the roma tomatoes because they have more “meat” and less seeds.
Then, I sprayed down a muffin tin (Avocado oil in one of those “mister” things you can get at Costco – wipe any excess away with a paper towel), cracked one whole egg into each cup, added my veggies, and stirred it all around a bit. Then I slapped a tomato slice on top, added some cracked pepper and popped the tin in a 350 degree oven for 20 minutes. (Add whatever veggies strike your fancy or scour Pinterest for ideas!)
While those were cooking, I made my own sausages. I didn’t have ground pork on hand, but I some great ground beef (lean, of course). I crumbled it into a bowl, added some onion, sage, salt, pepper, and garlic powder. Then I formed little patties and browned them on the stovetop for two minutes per side. Then I stuck them on a rack placed on a rimmed cookie sheet and put them in the oven as I pulled the eggs out. They cooked for about 8 minutes and they were done (and what fat drippings there were, were pooled safely away from my patties in the bottom of the cookie sheet.
There’s a whole banana in the picture, but I only ate half of it. I’m saving the other half for breakfast tomorrow.
So, the end tally of my 21 Day Fix paleo experience is:
1 and a half red containers – each “Egg Muffin” is one egg and more than one sausage fit in the red container, but I only had one.
1/2 green container – the veggies added to each egg muffin was roughly 1/4 of a green container.
1 purple container – half of the banana.
Ok, that was my experience. Keep in mind that this is just how I did it. It’s not an exact science and you may add more or less to your muffins.
