Sweet Potato Taco Bowls – Whole 30 Approved

Do you ever have those days when everything you try on in your closet has magically (not in a good Disney magic kinda way) shrunk overnight? Uhm, I’m pretty sure these pants fit yesterday. What’s up? This is just not a good way to start the day. Grrr. But if there’s a silver lining in all this “magic”, my cranky mood quickly turned into motivation.

It was time. The carefree days of Christmas cookies and spiked hot chocolate are officially over. I needed to either replace everything in my wardrobe (the Farmer said no – boo!) or get back to some healthy eating so my clothes will love me back again.

Here’s the thing: I’m a rule follower. I like structure. Things are simpler when black and white. I was on a mission. Next thing I know, I’m throwing out perfectly good chocolate cake and potatoes. I hiked in to the grocery store and bought up the produce department. The GREAT thing is I get all sorts of creative when I’m limited to preparing dinners with only healthy ingredients that taste amazing. Et voila, I have a new favorite creation! A healthy one…even Whole 30 and Paleo approved for my fellow structure-loving, rule-followers!

Sweet Potato Taco Bowls - Whole 30 Approved   Prep time 15 mins Cook time 25 mins Total time 40 mins   Ingredients 2 lbs ground turkey 4 medium sweet potatoes 1 medium yellow onion, diced ½c water 1T chili powder ½t garlic powder ¼t onion powder ¼t oregano ¼t crushed red pepper flakes 1 and ½t cumin ½t paprika 1t salt 1t pepper 2 large avocados 1T lemon juice 2t lime juice 2T fresh cilantro, chopped salt & pepper to taste Instructions Brown the ground turkey in a pan over medium heat. Drain. Poke holes with a fork in each of the sweet potatoes and microwave for 5 minutes. While the sweet potatoes are in the microwave, add the yellow onion, water, chili powder, garlic powder, onion powder, oregano, crushed red pepper flakes, cumin, paprika, salt, & pepper to the ground turkey. Bring to a boil and simmer for 7-8 minutes. Check the consistency of the sweet potatoes and, if necessary, rotate them on the plate and microwave until soft, a few minutes at a time. When soft, let cool for 5minutes. In a food processor, combine the avocados, lemon juice, lime juice, cilantro, salt, & pepper until creamy. Cut open the sweet potatoes lengthwise and fill with the ground turkey taco meat. Top with avocado cream sauce. 3.2.2885
