Sweet & Crunchy Paleo Balsamic Tuna Salad (gf)

When I think of a salad, I don’t think of just some green leaves with a few tomatoes scattered about. I think of a mixture of veggies and fruit with lots of flavor, that is filling, and that is also satisfying. Basically something that won’t leave me hungry and feeling like I need to raid my kitchen when I get home from work.

With that in mind, I have been making some really great salads lately. I know that I have mentioned it before buuuuut I’m getting married in May and have been trying to eat healthier and tone up as part of my “wedding diet”.

I know myself well enough by now to know that I can’t feel hungry or deprived when I am watching what I eat, so I have been getting really creative with making delicious filling salads.

I used the from my last post to create this Sweet & Crunchy Paleo Balsamic Tuna Salad that lasted me almost all week long!

I started with a mixture of greens, and tossed them with tiny broccoli florets (I used almost a full head of broccoli!). Then, I added sliced cucumber, sliced carrots, and a bunch of cherry tomatoes to the salad, as well as slices of apple. Lastly, I topped everything with the Paleo Balsamic Tuna Dip/Salad, and drizzled a little balsamic vinegar and olive oil on top.

You don’t even really need dressing here because when you mix everything together, the tuna salad flavor spreads to the rest of the salad. I drizzled a bit of olive oil to make everything mix together more easily, but besides a bit of salt and pepper, this salad is great as is.

One thing that isn’t pictured, and that is REALLY good with this salad, is hard boiled eggs. They add more protein and the flavors just work with the sweet tuna salad. I didn’t add hard boiled eggs to my salad everyday but in the future I will.

I used this recipe to make 4 salads, which lasted me Monday-Thursday of work.

I’ve been finding meal prepping and coming up with different salads to be pretty fun and I’m excited to share more ideas.

Distribute the contents of the bowl onto 4 plates (or into 4 tupperware, as was the case for me), and top each plate with ¼ cup of tuna salad. OR 2) Place 1 cup of mixed greens on 4 plates (or into tupperware). Evenly sprinkle the broccoli florets onto each plate. Put 4 cherry tomatoes onto each plate. Evenly sprinkle the sliced carrots, cucumber, and appleonto each plate. Top each plate with ¼ cup of tuna salad. Optional- add one hard boiled egg per plate for extra protein. 3.4.3177
