If you are like me, then you are always on go. After going vegan I had to get really creative with the types of food I ate, but I had one big problem. I still needed food to be delicious! I did not want to compromise taste for health, and made it a point to create things that encompass both.
This is my take on morning Oatmeal. It’s quick, easy and tastes amazing. When I first made this dish and started eating it I remember saying to myself that, “It isn’t fair that this taste so good and is healthy for you!” It tastes like dessert, but it’s packed with protein, healthy fats, fiber, antioxidants, and no refined sugars.
This meal is prepared in 15 minutes or less (including prep time and cooking time) and serves 2 people.
– 1 1/4 cups, frozen Blueberries, wild, frozen – 1 tsps Agave Nectar (Nature’s Agave) – 3 tbsp Hemp Protein Organic Superfood (Nutiva) – 1 extra small (less than 6″ long) Banana, raw – 2 tbsp Almond Butter, Maple (Justin’s) – 1 ozs Coconut meat, dried, sweetened, flaked or shredded – 0.5 cup dry Quick Oats (Mom’s Best Cereals)
Instructions 1. Bring water to a Boil for 5 minutes 2. Add instant Oatmeal and lower and lower heat and let reduce 3. Scoop Oatmeal into bowl 4. Mix in Hemp Powder, Almond Butter, and Agave Nectar 5. Top off Oatmeal with Blueberries, Sliced Banana and Coconut Flakes
