Peanut Butter Overnight Oats

HOORAY! Another weekend has found us again! I hope you have some exciting plans, so I can live vicariously through you while I paint the trim in our dining room.

Today, I’m just swinging by to share a quick and balanced breakfast recipe that I’ve literally become obsessed with over the last month. I’m talking need-it-every-day-or-I-get-annoyed kind of obsessed. And that is Peanut Butter Overnight Oats.

I’ll be honest, I’ve spent several Pinterest-scrolling years encountering recipes for overnight oats and was always hesitant to try them. Here’s why: They’re cold. And the idea of eating cold oats in the morning was scary… and a little weird. I mean, a piping hot bowl of oatmeal is as classic as classic gets in the morning, and now these food bloggers were trying to tell me to eat my oats differently. Saaay, what? I’m not comfortable with that.

Until about a month ago.

I was feeling like I was in a breakfast rut (do other people get those???) and needed to explore new options. Out of desperation, I turned to one of the most basic overnight oat recipes I’ve seen floating around Pinterest, did a little Katie tweaking, and OMG. It was love at first bite.

I began making it every single night in preparation for the next day. Bryan would question why I don’t just make a big batch for the week – because they totally keep for multiple days in the fridge – but I insisted I liked to prep them every night. It’s a routine thing. Like, in preparing my oats, I’m mentally and physically setting myself up for a great day. I told you, I get weird about breakfast.

Anywhooo, knowing I was going to be out of town last weekend (and away from my overnight oats) for my , I volunteered to bring breakfast for all the wedding party ladies, so I could 1. selfishly eat my same ‘ol breakfast and 2. I could share my new favorite food EVER with as many people as possible. A win-win, really. Here’s the spread I put out for the ladies:

Reviews were killer. So here I am, turning into another blogger with an overnight oats recipe. But that’s ok. I dig it. And there are never enough, in my opinion.

So without further adieu, I give you sweet, creamy and actually good for you, Peanut Butter Overnight Oats.

PEANUT BUTTER OVERNIGHT OATS Prep Time: 5 Mins. Yields: 1 Serving (can easily double, triple, etc. for the week)

INGREDIENTS: 3/4 c. Quick or Old Fashioned Oats 1/2 c. Almondmilk – or Milk of Choice 1 tsp. Chia Seeds (*Don’t omit or oats will not thicken) 2 T. Peanut Butter 5 Drops (See note) OR 1/4 tsp vanilla extract 1 heaping tsp honey

DIRECTIONS: 1. Place all ingredients in a small tupperware (the 2-cup Pyrex bowl works perfectly for one batch) and mix until well combined. 2. Place in the refrigerator for 2 hours or overnight. 3. In the morning, you can add additional almondmilk if you like your oats creamy. Additional peanut butter, if your heart is calling for it. Or as many toppings that will fit in the bowl. I like berries, unsweetened coconut flakes, sliced almonds and more. Go nuts.

NOTE: Stevia drops can be pricey upfront, but let me tell you, buying one bottle has been well worth the investment. I’ve had my bottle for at least 6 months, and it barely looks like I’ve put a dent in it, and I use it every day. You can mix it into Greek yogurt, pancake batter, coffee, and a million more things.
