These muffins are made with pancake mix…but not just any pancake mix, ! Which turns these mini muffins into POWER muffins! Yup, no different types of healthy flours needed, just this protein packed, gluten free, no preservatives, no additives pre-made pancake mix. This pancake mix is delicious in pancake form (just add water), but put them into muffins and this treat becomes a great portable snack! My kids love these when we are on the go (which seems like every minutes).

Pancake Power Muffins   Prep time 5 mins Cook time 10 mins Total time 15 mins   Pancake Power Muffins Author: Kristen's Fit Food Cuisine: snack Serves: 24 Ingredients 2 cups About Time Cinnamon Protein Pancake Mix 1 cup unsweetened Almond milk 1 egg ¼ cup honey 2 bananas 1 tsp vanilla Toppings: I used semi-sweet and white chocolate chips. I also like these with chopped apples, blueberries, walnuts. Instructions Preheat oven to 350 degrees. Spray mini muffin tin tray with coconut oil spray.
