Mini cheesy muffins

These savoury snacks are a favourite for morning tea or as an after school snack.  These muffins are made with bacon, cheese and tomato.

Mini cheesy muffins Prep time:  15 mins Cooking time:  18 mins Total time:  33 mins Serves:  24   Ingredients 100g bacon, chopped finely (fat removed) ½ brown or red onion, chopped finely 1 tomato, diced and de-seeded ⅔ cup cheddar cheese, grated 1 cup self raising flour 1 tablespoon flat-leaf parsley, chopped ½ cup milk 1 egg, lightly beaten 1 tablespoon olive oil salt and pepper Method Preheat oven to 200C. Fry the onion and bacon together for a few minutes in a frying pan with a little bit of olive oil. In one bowl place the self raising flour with the salt and pepper. In another bowl, place the egg, tomato, cheese, olive oil, milk and bacon/onion mixture with the parsley. Pour the wet mixture into the flour and fold lightly until combined. Spoon the mixture into a lightly greased 12 hole mini muffin pan. If you have more mixture use another 12 hole muffin tray or whatever size tray you have. Bake for 15-18 minutes or until golden. Serve warm or at room temperature. 3.2.2885
