For a great way to start the day, try out these simple oatmeal pancakes. They are light, fluffy, and delicious!
Since we’re still on a little healthy food kick here at Food Apparel we thought that we’d share another simple,tasty, and healthy way to start the day before starting to roll out the hearty Super Bowl favs and loads and chocolate and treats for Valentine’s Day (man, us Americans don’t really like a break from the “holidays” do we? You can consider the Super Bowl a national holiday, right?). I love breakfast, but sometimes the morning can run away so quickly. That’s why I have this little go-to Oatmeal Pancake recipe. It’s so simple, they come together in just a few minutes, and everyone loves ’em.
I grind up my oats so that it’s like a flour consistency in this recipe. If you like making these pancakes a lot, then just grind up a bit in advance and have it on hand in the pantry to make things even faster.
This recipe calls for buttermilk. You can use regular milk as well. Buttermilk just helps give the pancakes a lighter consistency. If you don’t have buttermilk, do the quick buttermilk substitute by adding just a little white vinegar or lemon juice to some milk and letting it sit for about 5-10 minutes so that it begins to curdle. Then use it all, curdled bits included. (Ratio is 1 cup of milk 1 tablespoon white vinegar or lemon juice).
