AS220 is a community of artists in downtown Providence that provides open forums and opportunities for Rhode Island artists. We provide an alternative to the institutional venues and have gained attention for our commitment to an “open and unjuried”, egalitarian approach to nurturing a creative community.
The activities of AS220 include, but are not limited to, several weekly events in our performance space, monthly gallery exhibits, a number of annual events, including Foo Fest, the AS220 Youth Studios community learning center, the Cottage Industries that include our Darkroom/Digital Photo, Printshop, and Fab Lab. The newest addition to our programs is 95 Empire Performance Collective, which is comprised of a black box theater, theater arts school, dance facilities, and a group of resident performers. AS220 currently owns and manages three buildings in downtown Providence that house approximately 50 artists, commercial tenants, and provide individuals and collaborative work space, galleries, venues, and our bar and restaurant. The FY2015 operating budget of AS220 and related for-profit entities is $3.4 million.
AS220 Foo(d) is an eatery that embraces the values of the organization and recognizes the outreach potential inherent in a mission-aligned food program. In light of our mission to support local artists and entrepreneurs, we look to our local New England farms and food artisans to provide our quality ingredients. Our Seasonal Menus and daily specials are created using the freshest local ingredients available. The physical space consists of a 340 sq ft counter/kitchen area and a 1300 sq ft seating area. We have an OPEN kitchen environment where the atmosphere is casual and family friendly. Part of the aim of the food program is to create an opportunity for meaningful food service training and work experience for members of our AS220 Youth program.
AS220 Foo(d) Staff Members are expected to positively represent the restaurant and AS220 as a whole. As stewards of the community, all staff are expected to show an exceptional quality of customer service: politely and courteously greeting, engaging, assisting, serving, and thanking all patrons, performers, fellow staff members, and participants of any of AS220’s programming, residents. The team is responsible for articulating AS220’s mission and vision, being knowledgeable of AS220’s programs, and encouraging the community to become involved, as necessary.
General Responsibilities:
The Prep Cook is responsible for prepping food for the day/week, assisting cooks throughout the day with prep as needed, receiving and putting away deliveries, helping train and mentor dish staff, helping maintain and oversee overall cleanliness of dish, dining, and storage space.
Food prep: The prep cook is expected to be passionate about and familiar with basic cooking techniques (bake, braise, boil, roast, etc.) as well as seasonal produce and basic professional grade kitchen equipment. The ideal candidate will possess a willingness to learn and grow in the position, working side by side with the Head Chef and line cooks to create consistent, quality menu items. Examples of daily tasks involve knife work with various foods, making soups, salads dressings and dips, assisting in preparing any other menu items as need. Consistently communicating with Head Chef and line cooks about prep needs, ordering needs, spoilage and loss, etc.
Space maintenance:
The prep cook is responsible for setting up the kitchen, back kitchen, and dining area for the day. Specific tasks include, but are not limited to; priming the dishwasher in the am, setting out mats and trash cans, reviewing the space and taking note of anything left undone from the night before. In the afternoon the prep cook is expected to receive and put away deliveries, clean and organize the walk-in, reporting any waste to the head chef, oversee and assist with cleanliness of dry storage and all storage space, oversee and maintain regular cleanliness and maintenance of the grease trap. The prep cook is additionally expected to be completely familiar with every aspect of the dish job in the event of needed to cover for dish staff as well as being able to assist with the job daily.
Team role:
The prep cook plays a key role to the overall operation of the kitchen team, as such they are expected to act as a mentor to all dish staff and assist the Head Chef and line cooks in training all new dish staff, overseeing cleanliness and health code procedures, maintaining a sense of structure and time management both personally and among dish staff. The prep cook should also possess a willingness to take on any additional tasks that may be asked of them throughout the day to help out the overall team.
Growth:
Possess a willingness to grow and evolve with the changing needs of the organization, especially in regards to future renovations to the restaurant and bar. Ability to envision and communicate growing needs for the restaurant.

As such, while at work, and coinciding with the upholding of an exceptional level of customer service, all staff are expected to politely and courteously greet, engage, assist, serve, and thank all patrons, performers, fellow staff members, participants of any of AS220’s programming, residents, etc. Staff are responsible for the running of AS220 Foo(d) in accordance with our mission, values, policies and practice.
The Cooks are a critical piece in our outreach strategies. They are expected to provide excellent customer service and play a role in creating a unique space that celebrates food and drink as art and as a building block of community.
