We had a wonderful Easter weekend. Two of our five children came home for Easter and I was thrilled! My daughter in Florida and my son in Minnesota couldn’t make it back and that’s the part that makes holidays so hard, especially for me. I want all of my kids home when we celebrate anything special and when they’re not all here, it always feels like something is missing.
I won’t complain though. I’m grateful.
I’m so thankful to my husband who made all of the arrangements for our kids to travel back home. He knows how hard it’s been for me lately. I went from being a mom of five very active teenagers to almost suddenly having only one child at home. Our kids are close in age and graduated from high school and went off to college one right after the other. Truthfully, them heading off to college was never the issue. My kids came home from college often. They loved getting a home cooked meal after months of dorm food. The issue is life after college, when they begin jobs and careers and can’t take off of work easily.
Life is always changing, I guess – we all have to adjust.
Over the weekend, my son, who is visiting from California asked me if I could make pancakes for breakfast. He rarely makes pancakes at home because he never remembers to buy pancake mix. As he watched me make the pancake batter, we chatted over coffee about his job, the gorgeous California weather and his recent trip into the mountains. As we were talking, he noticed how quickly and easily I threw together a batch of pancakes from scratch. It dawned on me that I should put together a recipe for a single serving of pancakes so he could make fluffy and delicious pancakes from scratch for pennies.
This recipe will yield 2-3 of the best tasting, light and fluffy pancakes you’ve ever tasted.
It’s the perfect amount for one person. If you like banana pancakes, mash a banana and add it to the batter. You may have to add a little more milk to get a thinner consistency, though. If you want to add a handful of chocolate chips or blueberries, go right ahead. This is a basic pancake recipe that delivers pancakes that not only taste great on their own but are perfect for add ins.
Day-old pancakes don’t taste as good as hot off the griddle ones and with this easy recipe, you don’t need to make a huge batch to satisfy a pancake craving.
