Work-related muscular skeletal disorder (WMSD) is the largest injury type found in the hospitality industry. It is therefore the most expensive in terms of worker’s compensation payments and time off work. WMSD’s can occur from a single instance or they can occur over time from prolonged exposure to stress on the body.
Although there are many causes within commercial kitchens, work table design is one of the greatest causes of WMSD’s in the commercial kitchen environment. Workers often stand for prolonged periods on concrete floors or other hard surfaces while working with many types of ingredients, pans, trays and appliances. There is no typical worker in an institutional kitchen; kitchen workers come in all sizes and ages, both male and female. Having a working surface that adjusts to the worker allows any employee to comfortably and safely use any surface in the kitchen.
In commercial kitchens, food service professionals perform a number of different tasks and many of these tasks require varying bench heights. As a simple example, heavy chopping requires a bench height 10-25cm below elbow height and light cutting requires a bench height 5-10cm below elbow height. Icing a cake, scrubbing a pan, kneeding dough, portioning servings all require their own ideal height. Take a look at this small sampling of food service workers in the photo. Imagine what height a work surface should be for it to be “waste height” or “elbow height”? A single height work table would require one man to stoop causing back strain, while another must reach causing shoulder and arm strain.
