Cooking Christmas Dinner – Eve Prep

Today is just as busy in my kitchen as it is Christmas morning. There are many dishes that I make the day before to save my energy for the dinner and company coming.

I have laid out my turkey to thaw but I am not worried if it does or not since I cook my bird all night in a low heated oven covered in foil.

I took out the pecan pie I bought and its thawing in the TupperWare pie holder with a cover, I took the cheesecake from the freezer and put it in the fridge to thaw since it required refrigeration.

I always make potato salad on the eve of a holiday meal because it keeps well in the refrigerator and I like mine cold.

I also make the cornbread for my cornbread dressing, some call it stuffing but I do not stuff my bird, I chop the celery and onions and for the dressing, I put those in a container with a lid so they are ready for tomorrow morning.

I peeled and boiled a few pounds of sweet potatoes and made three pies, they are baking at this very moment, two I will give away today and one I will keep for my dinner.

I have the eggs cooling to make deviled eggs, I also boiled a few extra to put into the refrigerator for my giblet gravy that I will make tomorrow morning.

I am going to make one more cake and this one will be a new cake that I have never made. I will use a butter pecan mix and top it with a maple frosting, I will toast pecans and cover the top of the cake. I am hoping it will be as wonderful tasting as I think it will be.

Although I said I was not making a huge dinner it is turning out that it will be a lot of food, so that means I will be on the road tomorrow evening delivering food to people who will not have a Christmas meal.

Turkey

Dressing

Green beans

Potato salad

Cranberry sauce

deviled eggs

Maybe kale

Desserts :

Pecan pie

Cheesecake topped with fresh strawberries

Sweet potato pie

Butter pecan cake with maple frosting

I am sure I am missing something.
