I have many very fond memories from my time in New England, not the least of which is visiting the local apple orchards to pick apples every fall to make these apple spice muffins. With the summer season already reaching its late stages, my mind is wandering quickly to those crisp fall days with the warm sun that’s traditional of New England’s early fall days. Apple picking was a traditional school field trip for the elementary school kids, and my mom used to really enjoy visiting the orchards, too, so I got to spend quite a bit of time amongst the apple trees.
Every year around this time, I find myself thinking of those days and craving apple dishes made fresh with apples straight from the orchard. These muffins are one of those things that I turn to quite often, because they combine the warm spices of the fall season with fresh apples. And, with applesauce in the recipe instead of oil or butter, they’re a healthier alternative.

Author: Tara Kimball Recipe type: Breakfast Serves: 18 Muffins Ingredients 2 cups flour ¼ cup granulated sugar ¼ cup brown sugar 3 teaspoons baking powder ¼ teaspoon baking soda ½ teaspoon salt 1 teaspoon cinnamon ½ teaspoon nutmeg 1 cup buttermilk ¼ cup honey ¼ cup applesauce 1 egg 1 teaspoon vanilla 1½ cups diced apple, about 2 medium apples Instructions Preheat the oven to 375 degrees. Combine the flour, sugars, baking powder, baking soda, salt and spices in a large bowl. Mix the applesauce, honey, buttermilk, egg and vanilla in a small bowl.
