Wondering what the heck this “21 Day Fix” is all about? Well, it’s your food and exercise–simplified, intentional, purposeful, and planned. I make a meal plan each weekend for the following week and today’s breakfast was all about healthy balance with the 21 Day Fix!
BEFORE
FIrst, I had to get out all of my allotted containers for today’s breakfast plan. Then I got to fill them! I had my Red container of my liquid egg whites, my Yellow (non-container) of whole wheat toast, my Green container of red bell peppers, my Blue container of Kraft fat free cheese, and my teaspoon of natural creamy peanut butter. Just like any organized person, my meal was prepped and ready to be cooked up!
AFTER
Once all my food was looking ready to go, I went ahead and sprayed a small skillet with some nonstick EVOO spray and began with sautéing my peppers. I popped the toast into the toaster, and poured the liquid egg whites into the skillet with the peppers and got them good and scrambled. Next, I tossed in the shredded cheese until it melted, spread the PB on the toast and it was time to eat! Seriously easy, right? All of this took me about 10 minutes to prep and cook. This is one of my favorite daily “Fix” meals for the morning.
