21 Day Fix – Food Prep Made Easy – Quinoa

Today I’m going to give you one of my food prep tips, in the video below for the to make it simpier and easier for you. This will help you stay on track and follow the 21 Day Fix Eating Plan.

Today’s tip and  video is about quinoa. Quinoa is an ancient grain. You can use it to replace your pastas and rice. It falls on the yellow container food list for the 21 Day Fix program. Quinoa is actually a great source of protein (good for vegetarians and gluten free) and amino acids and vitamin B.

I basically just follow the directions on the back of the package. My bag is from Costco. It says to add 2 cups of water to 1 cup of quinoa. Bring to a boil, cover and simmer for 15 min. I actually cook mine longer, simmering it for about 20 — 25 minutes. Checking on it and stirring it. I don’t like mine so watery.  I did try to make it once in the rice cooker, following the directions on the package, but it came out too dry.  So I stick to the stove top.

Look for quinoa that is already pre-rinsed. It will save you the trouble and hassle of rinsing it. Otherwise you need to rinse it and try to strain the water out.

Don’t just make one serving. I follow the Costco recipe and I make a big batch. I can store it in the refrigerator and scoop it into my yellow container when I need it. You can either eat it cold or warm it up in the microwave for about 30 seconds.
